Gongura Mutton / Gongura Mamasam


Gongura mamasam is one of the favourite recipe for non-vegetarians in Andhra, the taste of this recipe increases day by day, you can store it in a refrigerator and serve with plain rice.

Preparation :15 mins.
Cooking :45 mins
Serves          :4





Main Ingredient

Mutton 400 gms
Gongura / red sorel leaves 2 cups ( paste)


Other Ingredients

Onion 2 large no.s(cut into pieces)
Green chillies 6 no.s
Oil 3 tbsp
Curd 2 tbsp
Turmeric 1/4 tsp
Ginger-garlic paste 2 tsps
Garam masala 2 tsps
salt to taste
and 1/2 tsp of cumin seeds & dried red chillies  powder.


Method:-

1. In a pan boil gongura / red sorel leaves with 2 green cardamom, 1 inch cinnamon stick & 2/3 cloves.Till  wilted. Cool it then grind into a paste.



2. Cut the mutton into small pieces and wash it, marinade with 1 tbsp of oil,curd red chillie masala powder,    turmeric powder, salt and half of onion pieces for half an hour.



3. In a wok heat the rest of oil add onion slices saute them until translucent add ginger-garlic paste saute the   masala until rawness disappears then add mutton to the masala, fry till the oil separates the mutton then  adjust the water, cook till tender.

4. Add Gongura paste to the cooked mutton mix well turn the flame on low heat for ten to fifteen mins.




5. Sprinkle garam masala powder and the powder of cumin seeds and red chillies keep the lid.
